Water Kefir

The bunny is going through a water kefir streak.

What's water kefir you may ask?
It's a fermented probiotic drink made from culturing sugar water, juices or coconut water with water kefir grains. Kefir (pronounced kah-fear) means feel good in Turkish. The drink tastes tart and can be fizzy if bottled. You can also add in flavoring to make the water kefir even more palatable.

Water kefir grains are not grains at all. Rather, they are a live culture of good bacteria and yeasts held in a polysaccharide matrix.

Water kefir grains

The brewed drink is said to help to restore gut health, contributes to a healthy immune system, improves digestion, increase energy and give an overall sense of good health. It is also rich in vitamins and minerals such as Vitamin A, B2, B12, D, K, calcium, magnesium, phosphorus, enzymes and amino acids such tryptophan - the building blocks for a healthy nervous system.

It's actually very simple to make water kefir. I use the ratio of 1 cup filtered water ; 1 tablespoon sucanat (sugar) : 1 tablespoon water kefir grains.



Directions:

1st fermentation
1. Dissolve the sucanat in the water in a glass jar and add the grains. Cover.
2. Leave the set up alone for 24 hours, away from direct sunlight.
3. Strain the water kefir grains from the liquid with a plastic sieve. You can drink the water at this stage or bottle it in a 2nd fermentation for a fizzy soda.

2nd fermentation
1. Bottle the water kefir (without the grains) with your favorite fruits.
2. Make sure the cap is on tight and leave it in the fridge for 24 hours.
3. Ta-da! Enjoy your healthy fizzy soda drink!

Note: Don't use any metal when preparing water kefir
